SPAM® and rice are a perfect pair. So we thought: “Hey. Would SPAM® and rice cakes be even perfect-er? Cakes are awesome! What could happen?” SPAM® Bibingka happened, that’s what.
Ingredients
SPAM® 1-2 cans of SPAM® Classic (cut into slices 1cm wide x 3cm long)
1 ½ kg laon rice, washed and soaked overnight with water (just enough to cover rice)
1 can evaporated milk
1 cup coconut milk
¾ kg sugar
½ bar butter, melted
¼ cup + 2 tbsp baking powder
2 tsp yeast
1 cup gata
10 whole eggs
Banana Leaf
Option: Slices of cheese
Directions
Soak rice overnight, then drain
Add water to 1” (2.5cm) above the rice
Grind soaked rice twice in food processor or blender, or ask your “suki” in the market to grind it for you
Blend the following in a medium bowl:
1 can evaporated milk
1 cup coconut milk
¾ kg sugar
1/4 bar butter, melted
¼ cup + 2 tbsp baking powder
2 tbsp yeast
Let mixture sit for 1 hour
After 1 hour, add 10 whole eggs
Line molder with banana leaf and scoop ½ to ¾ cup (depending on size of molder) of Bibingka mix
Top generously with slices of SPAM® Classic. Add cheese if desired
Bake in over for 25-30 minutes or until cooked
Brush on remaining ¼ bar of butter (melted), and dust with sugar
