Cornstarch slurry (1 tablespoon of cornstarch mixed with ¼ cup of water)

Slice SPAM® Lite into uniform blocks, about 8-12 in one can.
Prepare the flour, egg, and breadcrumbs separately in different bowls.
Dip each SPAM® Lite block in flour, coating then dusting off the excess. Followed by a dip in the egg, then rolled and coated in breadcrumbs.
Cook breaded SPAM® Lite blocks in a preheated air-fryer for 15 minutes at 180-200 degree celsius or until golden brown.
While SPAM® Lite blocks are frying, prepare the sauce by combining by combining vinegar, water, sugar, pineapple juice, lemon juice, ketchup, Worcestershire sauce, and cornstarch slurry in a saucepan. Bring to a boil then lower heat to simmer for 30 minutes or until the sauce thickens.
In a wok or skillet, heat oil and cook onions, bell peppers, garlic, and ginger.
Add the sauce prepared earlier and bring to a boil.
Mix in the pineapples and simmer for around 10 minutes or until the sauce reduces further. Pour the cornstarch slurry to thicken the sauce faster.
